Banana Chocolate Chip Muffins


2 and 1/2 cups of all purpose flour

1 tbsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 cup of unsalted dairy free margarine, melted and cooled

1 cup of granulated sugar

2 ripe bananas (smooshed with a fork)

1 cup of dairy free milk

1 tbsp vanilla extract

1 1/2 cups of dark chocolate chips (Egg, diary, and nut free such as, Enjoy life, Pascha, or Fair Trade or Divvies)

1 tsp sea salt

1 tsp course decorating sugar


Preheat Oven to 400 degrees. In bowl mix together flour, baking soda, baking powder, salt, and dark chocolate chips (I used Enjoy Life Dark Chocolate Chips). In separate bowl whisk together melted dairy free margarine (I Iike Fleischmanns unsalted margarine) sugar, ripe bananas, vanilla, and dairy free milk (I like So Delicious coconut milk). Slowly add the dry ingredients, a little at a time. Gently fold everything together until combined. Fill paper cupcake cups 3/4 of the way to the top in 12 muffin tin pan. Sprinkle the top with corse sea salt and course decorating sugar. Bake for 5 mins at 400 degrees. Then, lower to 375 and bake for 13-17 minutes. Let cool slightly, but serve still warm. Yum!
